Alpha-amylase High temperature is the Liquid concentrated enzyme alpha-amylase (alpha-1,4-glucan-4-glucanohydrolase).

Alpha-amylase hydrolyzes randomly α-1,4-glucosidic bonds of preliminary gelatinized starch with the formation of maltodextrins, reduces the viscosity of batches with starch containing raw material and prepares them to the subsequent saccharification by glucoamylase.

At the high-temperature schemes of alcohol production from starch containing raw material Alpha-amylase is dosed out in a mixer or the apparatus of hydrodynamic enzymatic processing. At the classic schemes of cooking the preparation is dosed out directly in the saccharifier.

The dosage depends on the raw materials and technological parameters of the process. The optimal dosage can be selected by laboratory or production tests.

Alcohol production

Alpha-amylase is a medium-temperature enzyme that hydrolyzes chaotically alpha-1,4 bonds of pre-digested starch to form dextrins, reduces the viscosity of starch-containing raw materials, reduces saccharification time, increases the yield of extracts and prepares them for further saccharification with glucoamylase.

Bread production

Alpha-amylase acts on flour starch, slowing its retrogradation, producing low molecular weight sugars and dextrins, which improve the water absorption capacity of dough and bread.

The enzyme significantly improves the elasticity of the crumb, gives it a uniform and fine-grained structure, while increasing the shelf life of finished bread products.

Textile industry

The enzyme is used for loosening of fabrics, effectively removing starch grindings. Other fabric impurities (wax-like substances, lignin-containing impurities, pectin substances) are practically unaffected.

In brewing

Alpha-amilase is used for liquefy the liquefied grain additives.
