Enzyme for the hydrolysis of plant polysaccharides (pectin substances)
Pectinase (polygalacturonase) is an enzyme for the hydrolysis of plant polysaccharides (pectin substances), which are usually found in plants in the form of a complex complex known as protopectin.
The enzyme Pectinase contains a complex of pectolytic enzymes (endo-alpha1,4-polygalacturonase, exo-alpha1,4-polygalacturonase). The enzyme catalyzes the hydrolysis of internal 1-4-linked alpha-D-galacturonoside bonds in the main chain of polygalacturonates and pectin substrates with a low degree of methyl esterification.
The enzyme is obtained from a selected strain of Aspergillus foetidus with subsequent purification and concentration.
Appearance: water-soluble powder from yellow to yellow-brown color.
The dosage depends on the raw materials and technological parameters of the process. The optimal dosage can be selected by laboratory or production tests.

Production of juices, wines
Enzyme Pectinase facilitates pressing of fruit and berry pulp, increases juice yield, improves clarification and filtering of juices and wine materials. The fermentation period of the wort is significantly shortened.
